The aim of our book is to analyse consumer behaviour in the face of stock-outs and the factors that explain it. We addressed this topic by conducting a survey of 50 supermarket customers. The results showed that stock-outs result in losses for both the retailer and the supplier, as some consumers do not hesitate to switch to another shop or substitute the product when it is out of stock. As regards consumer behaviour, substitution is the most common response. A significant proportion of respondents, nearly 40%, prefer to replace the missing product with another item from the shop's range.
