Garlic (Allium sativum L.): From the Field to Market: Survey of a Technical and Economic Sector in Khenchela (Algeria)

Garlic is now one of the most promising crops in Algerian agriculture, driven by a growing number of investors and rising yields. But behind this momentum lie real vulnerabilities. This book presents a field study conducted among 27 farms in the wilaya of Khenchela, combining questionnaires and economic analysis to provide a comprehensive assessment of the sector.The study reveals the many obstacles faced by producers: high labor and seed costs, a shortage of irrigation and skilled labor, increased competition, and a lack of institutional support. It also establishes a key indicator: a production cost of 21 DA per kilogram of garlic.Amid structural constraints and encouraging signs, this study offers valuable insight into the levers that need to be activated to strengthen a sector that is strategic for the local economy.
