The objective of this study was to analyze the impact of potato production on the economy and food security of households in the Lubero Territory. To achieve this objective, the following questions were posed: How has potato production evolved in the Lubero Territory? What is its contribution to the economy and food security of households? What strategies do households employ to reduce food insecurity? After analyzing the data, an average annual growth in potato production of 780 metric tons was observed. Furthermore, the index results indicate that households in the Lubero Territory are at a borderline level of food security. Furthermore, 38% of households live on less than $1 per day. Moreover, food expenditures for the surveyed households account for an average of 65% of total expenditures. These results indicate that poor households spend more than half of their income on food. Consequently, households resort to negative and stress-inducing strategies to secure food and engage in other activities to ensure their survival.
