Thus, functional foods have been gaining ground in the market and in people's daily lives, as they provide various health benefits. Diets enriched with green bananas (Musa spp.) has been the subject of some research in Brazil due to its nutritional properties and especially its high content of insoluble and non-digestible fiber, characteristics that give this product the potential for use as a prebiotic, which beneficially affects consumer health by selectively stimulating the growth or activity of one or a limited number of bacteria in the colon, improving immunity.
